A good dinner party is all about sharing great food with great friends. To ensure you spend as little time in the kitchen and more with your guests we have come up with a fab dessert idea that can be prepped in advance with only a little last minute assembling to do before being ready to serve and wow your guests.
The base is our ultimate chocolate brownies that can be bought online or from us at the farmers' markets.
1. cut brownies into disks (or buy from the mk online shop click here) using a pastry cutter, warm before
2. serve on some raspberry puree/coulis (see below for raspberry puree recipe) or use thinned seedless raspberry jam if looking for a quick cheat
3. add a few fresh raspberries
4. add a quenelle of vanilla bean ice cream (form quenelle shapes in advance, store in freezer unitl last second).
Steps 1, 2 & 4 can be prepped ahead and the plates made up ready to add the brownie.
The brownies can be warmed in the oven or for a few seconds in the microwave but ensure they are not too hot, just so the middle goes nice and gooey. For an extra wow, add a line of popping candy (space dust as we used to call it) in the middle of the raspberry puree.
Raspberry Puree Recipe
300g frozen raspberries, 100g icing sugar (reduce if like it tart), 1 tsp lemon juice
Defrost raspberries in a sieve, over a bowl. When defrosted mash raspberries with a fork through the sieve so that only the seeds remain. Add lemon juice and icing sugar to the bowl and stir. Freezes well so can be made well in advance. Also great on ice-cream.
